Cheddar-Bacon Drop Biscuits

I know this is one of those sinful items but I cannot help myself. I love them. I don't have them too often but every now and again they are heavenly. (just not so heavenly for my body). They kinda remind me of the kind you get from Red lobster only TEN TIMES BETTER. So have fun add them to dinner tonight the family will think they did something to deserve an extra special meal.

Things You Will Need

9 ounces (2 Cups) all-purpose flour
1/2 Teaspoon Baking Soda
1/4 Kosher Salt
3 1/2 Tablespoons Chilled Butter, Cut Into Small Pieces
1/3 cup (1 1/2 ounces) Finely Sharp Cheddar Cheese
2 Applewood-smoked Bacon Slices, Cooked & Crumbled (or Turkey Bacon If You Prefer)
3/4 Cup nonfat Buttermilk
1/4 Cup Water
Cooking Spray

Instructions

1. Preheat Oven to 400 F
2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking soda, and salt in a large bowl; stir with a whisk. Cut in butter with a pastry blender or two knives until mixture resembles coarse meal. Stir in cheese and bacon. Add milk and water, stirring just until moist. Drop dough by 2 level tablespoonfuls 1 inch apart onto a baking sheet coated with cooking spray. Bake at 400 F for 11 minutes or until golden brown. Serve warm.

Recipe Prepares 18 Biscuits

Tips/Tricks

Jennie-O makes a Turkey Bacon and it is quite good I would recommend it in the place of regular bacon. You can find some with a bit of spice to them, I am not sure if they make an applewood turkey bacon or not.
