Portabella Pizzas (As Requested)

These are Great as a Entree or as an Appetizer so try them out and let me know what you think. They are also great for you because all of the ingredients are natural. With Summer coming and Grad Parties coming; these will be quick and easy to add to your menu.

Things You Will Need

12 Portabellas
1 1/2 Cup of Marinara Sauce
1 1/2 Cup of (I recommend) Jennie-O Turkey, Cooked, Drained, and Crumbled
12 Tablespoons (or if you like allot of cheese add abit more) Shredded Mozzarella Cheese
6 Freshly Grated Parmesan Cheese
2-3 Tablespoons Finely Chopped Fresh Basil

Instructions

Preheat Oven 350 F
1. Wipe the mushrooms clean of any dirt and place them on the baking sheet, cup side up.
2. Spoon the marinara sauce in each cap, then the meat and cheeses.
3. Place the Mushrooms in the oven and bake for 6-8 minutes, or until the cheese melts. Garnish with basil and parsley sprigs.

Makes 12 Pizzas

Tips/Tricks

If you want to make these Vegetarian then you can use soy substitute products, or you can also use veggies instead of meat. Either way both ways turn out so well.

What Recipe Would You Like To See Next

Well at this point I have so many recipes to choose from it would be nice to have a little feedback as to what you would like to see next. So I have compiled a short list of a few of the things I think people would like to learn or have. Please message or comment and let me know which one you want next of the following.

1. Risotto
2. Stuffed Banana Peppers
3. Beef Strognoff
4. Spaghetti Squash with Meat Sauce (or Marinara for Vegetarians)
5. Portabella Pizzas
6. Salmon Burgers

This will obviously be an Entree Recipe since I have yet to give you one of those yet. Let me know and I will try to post it by tomorrow afternoon; just in time for you to prepare it for dinner.

Cheddar-Bacon Drop Biscuits

I know this is one of those sinful items but I cannot help myself. I love them. I don't have them too often but every now and again they are heavenly. (just not so heavenly for my body). They kinda remind me of the kind you get from Red lobster only TEN TIMES BETTER. So have fun add them to dinner tonight the family will think they did something to deserve an extra special meal.

Things You Will Need

9 ounces (2 Cups) all-purpose flour
1/2 Teaspoon Baking Soda
1/4 Kosher Salt
3 1/2 Tablespoons Chilled Butter, Cut Into Small Pieces
1/3 cup (1 1/2 ounces) Finely Sharp Cheddar Cheese
2 Applewood-smoked Bacon Slices, Cooked & Crumbled (or Turkey Bacon If You Prefer)
3/4 Cup nonfat Buttermilk
1/4 Cup Water
Cooking Spray

Instructions

1. Preheat Oven to 400 F
2. Weigh or lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking soda, and salt in a large bowl; stir with a whisk. Cut in butter with a pastry blender or two knives until mixture resembles coarse meal. Stir in cheese and bacon. Add milk and water, stirring just until moist. Drop dough by 2 level tablespoonfuls 1 inch apart onto a baking sheet coated with cooking spray. Bake at 400 F for 11 minutes or until golden brown. Serve warm.

Recipe Prepares 18 Biscuits

Tips/Tricks

Jennie-O makes a Turkey Bacon and it is quite good I would recommend it in the place of regular bacon. You can find some with a bit of spice to them, I am not sure if they make an applewood turkey bacon or not.

Homemade Honey Energy Bars

Stop Going to the store and buying those processed prepacked energy or whatever bars; make them at home. They are easy and great. They are also great for you. They contain about 1.7 grams of Fiber and 7 grams of fat. Only 164 Calories as well. Best of all this recipe will make about 12 bars depending on the size you cut them. That is a WHOLE LOT CHEAPER THAN THE STORE. Well I'm off my soap box and ready to arm you with this splendid recipe.


Things You Will Need

1 Cup Crushed Corn Flakes, Bran Flakes, Rice Krispies, or Special K Cereal
1/4 Cup Raw or Toasted Hulled Sunflower Seeds
1/2 Cup Sesame Seeds, Toasted
1/4 Cup Sliced or Slivered Almonds, toasted (preferably not salted)
2 Tbsp Ground Flaxseed
Cooking Spray
1/2 Cup Honey

Instructions

1. Combine all ingredients except honey in a medium bowl that has been sprayed with nonstick spay.
2. Bring Honey to a boil in a small saucepan. Reduce heat to low and simmer for about 8 minutes, until the honey reaches 275 degrees F. (soft-Crack stage) on a candy thermometer. If you don't have one, pour a little of the hot syrup into ice water- it should separate into hard but pliable threads that bend slightly before breaking.
3. Pour over cereal mixture and quickly stir to coat evenly. Press into an 8-by8 inch pan that has been sprayed with nonstick spray and lined with wax paper for easy clean up (tip otherwise its a mess to clean). Cool completely and cut bars.


Tips/Tricks
Have fun with this one I enjoy it. I like honey but prefer Agava Nectar so next time I make them I will be switching the honey for Agava I will update you and let you know how it turns out.

Banana Nut Pancakes (any fruit if you do not like Bananas)

This is one of Jeff's favorite dishes that I make. He will come home and ask for them for a couple days in a row. That is how much he loves them. As I stated before, this is a from scratch recipe. You also will be so sshocked to find out that it is not bad for you. The rule of thumb is processed foods are worse for you than things that are made from scratch. I read this and the recipe from the book "The French Don't Diet" written by a Neurophysiologist; who took his family to France for a Obesity Taskforce. There he learned that the French don't count calories or diet they eat in small quantities and NEVER eat processed foods. Also they could not find a fast food place to eat so that was another thing the French do not do. Long story short, The French have the right idea they eat all of their meals with their families (which we as Americans have stopped doing for the most part). The Second major thing is they DO NOT EAT PROCESSED FOODS. So now I will get off my soapbox and give you this fantastic recipe.


Things You will Need

1 Large Egg Beaten
3/4 to 1 Cup of Milk (see below)
1 Cup All Pupose Flour
2 Tablespoons Vegetable Oil, plus more for the griddle
3 Teaspoons Baking Powder
1 Tablespoon Brown Sugar
Pinch of Salt
Pinch of Ground Cinnamon
1 Pungent Ripe Banana, Mashed until Smooth
1 Cup Crushed Walnuts (optional if you like them)

In A Large Mixing Bowl

Beat the egg and milk (if you like your pancakes thick, use less milk; play with the amount to make the perfect pancakes) together, then add the flour and mix smooth. Fold in the oil, baking powder, brown sugar, salt, cinnamon, banana, and walnuts.

To Frying Pan or Griddle

Add about a tablespoon of oil and place it over medium heat. Then add about 1/4 cup of batter to the pan. You can vary this amount depending on the size of the pancakes that you prefer. Look to see when the batter develops bubbles, indicating the underside is golden. When ready, give it a flip and repeat the process for the other side.

A Trick

If you want to serve all of the pancakes at once set the oven at 150 and place the ones that are finished in there to stay warm. Whenever you are ready to serve them all of the pancakes will be hot to serve.

Enjoy These we have and we also have tried them with blueberries, strawberries, and a few other fruits so sample them and let me know.

Introductions

Hi to all in this blog you will find many recipes that I have tried that I love. Something you should know about me is that I am the wife of a Chef. Don't get me wrong; I can cook. I have always loved to cook. The great part about being married to a chef is that I have learned so many other Cuisines that I would have never dabbled in prior to meeting him. Mainly because I did not know they existed. Some Recipes I will share with you are Healthy and others are just down right Sinful and must be shared. I have this rule for myself that I like to make things from scratch mainly so that is what you will primairly see. Given the state of our societies obiesity I also will give you recipes that are versions of foods that we all love but can be made better for you.
Some History about me is that I am a Southern Girl. I grew up in Mississippi but now I reside in Pittsburgh, PA. I love it here because of all of the different cultures that you get to experience. We also have whats called the "Strip District" that is full of tons of excellent types of local vendors that you can visit. My Husband works for a huge company called Sodexo that works with Hospitals, major Corporations, and Universities. He works at the University of Pittsburgh. There he serves over 5000-7000 students a day. They have about 7-10 different eateries that he is incharge of (each a different cuisine).

So There you have a brief insight on what I will be doing and after this post I will be posting my first official recipe. So please stay tuned and let me know if there is something special that you would like to see.
